Nitrogen is gas at normal temperatures and pressures. Nitrogen gas makes up almost 80% of our atmosphere. Because nitrogen molecules are non-polar, they exert almost no attractive forces toward each other. As a result, it is a challenge to transform nitrogen into its liquid state. To do so, nitrogen gas must be cooled and compressed to a point below its boiling point – which is an incredibly cold -320 degrees F.
While you might think that a temperature of -320 would make it too cold to be beneficial, liquid nitrogen is actually a very useful substance. For example, in medicine, it is used to remove unwanted skin, warts, and pre-cancerous cells. It has also become increasingly common to see liquid nitrogen at top restaurants as a method for instantly freezing foods creating unique and appealing textures to things like ice cream. It is also poured into drinks to create and cloud of fog as the drink is presented to partakers. And scientists frequently use liquid nitrogen to study the effect of very cold temperatures on different materials.
