Getting Started: Brewing Pu-erh Tea at Home
Brewing Pu-erh tea at home can be a rewarding experience, allowing you to enjoy its unique flavor and reap its health benefits. The first step is to select the right tea. Pu-erh tea comes in two types: raw (Sheng) and ripe (Shou). Raw Pu-erh is the traditional form and has a strong, complex flavor that develops over time. Ripe Pu-erh, on the other hand, undergoes a fermentation process that gives it a milder, earthier taste. To brew Pu-erh tea, you will need a teapot or a gaiwan, which is a traditional Chinese lidded bowl used for brewing and drinking tea, a tea needle to break the tea cake, a tea pitcher, and tea cups. You will also need a tea tray with a drain to catch any overflow of water. Start by prying a piece of the Pu-erh tea cake with your tea needle. Be careful not to break the leaves. The amount of tea you need will depend on the size of your teapot, but a general rule is to use 1 gram of tea per 15–30 ml of water. For a 150-ml teapot, for example, you would use about 5–10 grams of tea. Next, rinse the tea. This step, known as 'waking the tea', involves steeping the tea leaves in boiling water for a few seconds and then discarding the water. This helps to clean the tea and allows the leaves to start opening up, releasing their flavor.After rinsing the tea, add boiling water again to the teapot or gaiwan. The water temperature should be around 200–212 degrees Fahrenheit or 93–100 degrees Celsius for ripe Pu-erh and slightly cooler, around 185–203 degrees Fahrenheit or 85–95 degrees Celsius for raw Pu-erh. Let the tea steep for a few seconds to a minute, depending on your taste preference. The longer the steeping time, the stronger the flavor. Once the tea has steeped, pour it into the tea pitcher to ensure the flavor is consistent before serving. From the pitcher, pour the tea into the cups. Pu-erh tea can be re-steeped several times, with each steeping revealing a new layer of flavor.
