Join your vegetarian friends for a meal with this spiced rice and lentils bowl that’s healthy, refreshing, super filling, and full of flavor – just arrived in time for spring!
Makes 4 Servings
Lentil Ingredients:
-1 cup of dry lentils
-2 cups of vegetable stock
-¼ teaspoon of smoked paprika
-Salt, to taste
Spiced Rice Ingredients:
-1 teaspoon of olive oil
-½ teaspoon turmeric
-¼ teaspoon cinnamon
-¼ teaspoon ginger
-⅛ teaspoon nutmeg
-1 cup of long grain rice
-2 cups of water
-Salt, to taste
Fresh salsa ingredients:
-1 pack (283g or 10 oz) of grape tomatoes, halved
-¼ of a red onion, about ½ cup chopped
-1 sweet yellow bell pepper, chopped
-Bunch of fresh cilantro or parsley, about ⅓ cup chopped
-Juice of 1 lime
-2 teaspoons of olive oil
-Salt, to taste
Optional toppings:
-Sour cream, hot sauce, or more lime juice
Directions:
1. To a medium pot over high heat, add 1 cup of dry lentils, 2 cups of vegetable stock, smoked paprika, and salt to taste. Mix well, cover, and bring to a boil. Once boiling, reduce the heat to low and simmer, cooking for about 25–30 minutes or until the lentils are tender and all the liquid is absorbed.
2. To another pot over medium-high heat add 1 teaspoon of olive oil, ground turmeric, cinnamon, ginger, and nutmeg. Mix and cook for about 1 minute until fragrant. Then, add the long-grain rice and toast for 2–3 minutes.
3. Add the water and salt to taste. Mix and bring to a boil. Once boiling, reduce the heat to low, cover, and let the rice cook until all the water is absorbed. Fluff with a fork and set aside.
4. To a bowl add the chopped grape tomatoes, yellow bell pepper, red onion, cilantro (or parsley), 2 teaspoons of olive oil, the juice of one lime, and salt to taste. Mix to combine.
5. Serve the spiced rice with the lentils and fresh salsa. Top with sour cream, more lime juice, or hot sauce if desired. Enjoy!
