I am sharing you my version on "How to Cook Balbacua | OxTail Recipe". We love this version, hope you'll love it too. Bon appetit. All ingredients are optional, modify as per your liking. Take everything in moderation. "Health is Wealth".

How to Cook Balbacua | OxTail Recipe
Ingredients:
Parboil
1 kilo - Ox tail w/ skin
1/4 cup - white vinegar
1 tbsp - whole black peppercorns
Water - enough to submerge ox tail
(boil for 3 minutes/wash/drain)

Cook in Pressure Cooker
5 pcs pcs = dried bay leaves
1 tbsp - whole black peppercorns
Water = just a bit lesser than ingredients as we are using a pressure cooker
(cook ox tail/bay leaf/peppercorns/water for 45 minutes/use High Flame)
***cool down pressure cooker for 30 minutes before opening the lid, make sure to follow its proper instruction correctly
*** dispose all liquid as its too oily

Stir Fry:
2 tbsp = olive oil
3 thin slices = crushed ginger
1 head = crushed garlic
12 pcs = spicy chili (6 pcs for garnish)
1/2 head - white onion
Water = enough to submerge all ingredients***after onions, stir fry ox tail, then add water
2 stalks = crushed lemongrass
2 tbsp = fermented black beans
1 stalk - leek (use leaves for garnish)
200 grams = 1 sm. can baked beans or pork & beans
1/2 cup = tomato sauce
2 tbsp = creamy peanut butter
1 pc = beef cube
1/2 cup = sprite
***Simmer for 1 hour
1 tsp = coarse salt
***garnish with sp8cy chilis

Cooking Time:
***Approx. 2+ hours w/ pressure cooker
***Approx 3+ hours w/o pressure cooker
