Kofta Biryani is a delightful fusion of succulent meatballs (koftas) and fragrant biryani rice, all cooked to perfection. This recipe will surely tantalize your taste buds and impress your family and friends.

📌 Ingredients (for Koftas):
400g minced meat (chicken)
2 tbsp Green Chilli chopped
1 small onion, finely chopped
2 tbsp Ginger , Garlic paste
1/4 cup fresh coriander leaves, chopped
1 tbsp Coriander Powder
1 tbsp red chili powder
1/2 tsp Garam Masala
2 tbsp Roasted Graam Flour
Salt to taste
📌 Ingredients (for Rice)
2 cups Basmati rice, soaked for 30 minutes
4 cups water
4-5 green cardamom pods
4-5 cloves
4-5 bay leaf
2-3 black Cardamom
Mace
2-3 Cinnamon
Salt to taste
2tbsp Oil
2 slice lemon
📌 Ingredients (for Biryani)
2 medium onions, thinly sliced
250gm cup yogurt
1 tbsp red chili powder
1 tbsp Coriander Powder
2 tbsp GInger ,Garlic Paste
1/2 tsp teaspoon turmeric powder
1/2 teaspoon garam masala
Oil for frying
Salt to taste
🔪 Step-by-Step Instructions:
For Koftas:
1. In a mixing bowl, combine minced meat, chopped onions, minced garlic, grated ginger, , chopped coriander leaves, red chili powder, ground cumin, and salt.
2. Mix everything thoroughly and shape the mixture into small meatballs (koftas).
3. Heat oil in a pan and fry the koftas until they are browned on all sides. Set them aside.
For Rice:
1. Drain the soaked rice.
2. In a large pot, bring 4 cups of water to a boil.
3. Add the drained rice, green cardamom pods, cloves, bay leaf, and salt to the boiling water.
4. Cook the rice until it's 70% cooked (it should still have a slight bite to it). Drain the rice and set it aside.
For Biryani:
1. In a separate pan, heat oil, and fry the thinly sliced onions until they turn golden brown. Remove half of the fried onions for garnishing.
2.Add red chili powder, shahi Jeera, turmeric powder, and garam masala. Cook for a few minutes until the spices are fragrant.
3.Lower the heat and add yogurt. Stir continuously until the yogurt is well combined with the spices.
4.Add the fried koftas and gently mix them with the yogurt and spice mixture.
5.In a large, heavy-bottomed pot, layer half of the partially cooked rice.
6.Add the kofta mixture on top of the rice layer.
7.Sprinkle half of the chopped coriander leaves over the kofta layer.
8.Add the remaining rice on top of the kofta layer.
9.Sprinkle the remaining coriander, mint leaves, and fried onions over the top.
10. Cover the pot with a tight-fitting lid and cook on low heat for about 20-25 minutes, allowing the biryani to steam and flavors to meld.
11.Gently fluff the biryani with a fork before serving.
