JIMMY'S BACK!!! For all of you who didn't know, Jimmy has been in New Zealand for the last few months acting in an upcoming film, you may have heard of it...Disney's Live-Action Mulan :D and what better way to celebrate his return than to make Mushu's Wake-Up Call/Congee!

Ingredients
1/2 cup rice
3 cups water
1 inch knob of ginger, peeled and minced
2 eggs, sunny side up
1 slice of bacon
salt and pepper, to taste

Directions
1. In a large pot, mix together the rice, water and ginger. Bring mixture to a boil, then reduce the heat to a low simmer. Stir occasionally so the rice doesn’t stick to the bottom.
2. Simmer it for about 1 hour, or until it’s thickened.
3. In a separate pan, fry two eggs and one piece of bacon. Fold the bacon over into a smiley shape as it cooks.
4. Pour the porridge to a bowl, and place the eggs and bacon on top of it in the form of a smiley face.
5. Sprinkle salt and pepper onto the eggs and porridge as desired.
