Dosa- Today we bring to you a recipe tht is most associated with South India! Yess, dosa!! Once you prepare a dosa batter, there are variety of ways, you can cook your favourite dosa. Plain Paper Dosa,Traditional Dosa, Butter Dosa, Uttapam, Cheese Dosa, Sambar Dosa,
Egg Dosa!!

--Ingridient for Dosa Batter

White rice or Parboiled idli rice 1kg
Fenugreek seeds/Methi seeds 2tsp
Urad Dal/Black gram 250g
Salt as required
Water as required

--Preparing Dosa Batter

Clean and wash the rice and soak in water for around 4 to 5 hours.
Clean and wash the urad dal, 2 teaspoon fenugreek and soak in enough water for around 4 to 5 hours.

After 5 to 6 hours have passed, drain the water from the soaked rice and urad dal.
Grind the dal alongwith the 2 tsp fenugreek/methi seed using a blender(or any grinder that you use) to a fine paste.
Also, grind rice to a smooth paste.
Mix both the rice and dal pastes together and add required amoun of salt. Use a ladle to mix them well and make sure the
consistency of the batter is free flowing and not runny!!

Now, cover the batter using a lid and allow it to ferment for about 10 to 12 hours or overnight.

After 10 to 12 hours, the batter will be well fermented. It will increase in volume and become frothy.

We can now use it to prepare dosa or idly.

We are now going to prepare a few varieties of dosa which you can have for breakfast , lunch or dinnner or just as a snack!!


--Plain Paper Dosa

Take a pan/tawa, once the pan is hot add a ladle batter to the center of the pan/tawa.
Gently spread the batter with a circular motion from the centre towards the sides of the tawa/pan.
Add oil on its sides.
When it turns golden/brown on the base, flip it and cook for a minute.
Then, transfer to a serving plate.
Serve hot with Sambar or chutney or both!!

--Traditional Dosa

Take a pan/tawa, once the pan is hot add a ladle batter to the center of the pan/tawa.
Do not spread the batter too much.
Once the upper side of dosa dries, then flip to the other side.

After a few seconds, our traditional dosa is ready. Transfer to a serving plate.
Serve hot with Sambar or chutney or both!!

--Butter Dosa

Take a pan/tawa, once the pan is hot add a ladle batter to the center of the pan/tawa.
Gently spread the batter with a circular motion from the centre towards the sides of the tawa/pan
Once the upper side of dosa is dried then add butter(as required}and spred well
After 30sec flip to other side od dosa
After few seconds dosa is ready and transfer to a serving plate.
Serve hot with Sambar or chutney or both!!

--Uttapam
Take a pan/tawa, once the pan is hot add about 1½ ladle batter to the center of the pan/tawa.
Do not spread the batter too much,let it be thick. Add chopped onion, chopped tomato, chopped green chilli, chopped ginger and
pour a spoon of oil on the sides.

Flip to the other side and wait for few seconds for it to cook and then transfer to the serving plate.
Serve hot with Sambar or chutney or both!!

--Cheese Dosa

Take a pan/tawa, once the pan is hot add a ladle batter to the center of the pan/tawa.
Gently spread the batter with a circular motion from the centre towards the sides of the tawa/pan.
Once the upper side of dosa is dried then add cheese(as required}and spread well.

Once the cheese melts, do not flip, just fold it into half.
Then transfer to the serving plate.
Serve hot with Sambar or chutney or both!!

--Sambar Dosa

Take a bowl add a ladle sambar and a ladle batter and mix well.
Once the pan is hot add the batter to the center of the pan/tawa.
Add oil on the sides of dosa and wait for it to cook, after a min when the sides become brown then flip to the other side and cook.

Then transfer to a serving plate.
Serve hot with Sambar or chutney or both!!

--Egg Dosa

Take a bowl and crack open an egg, add chopped onion, chopped tomato, chopped green chilli, chopped ginger,chopped coriander leaves, ½tsp red chilli powder, salt and mix well.
Take a pan/tawa, once the pan is hot add a ladle batter to the center of the pan/tawa and spread well in circular motions.
Once the upper side of dosa is dried, pour the egg masala mix on the top of dosa and spread well.

After a couple of mins, flip to the other side of dosa and wait for it to cook.
Then transfer to a serving plate
Serve hot with Sambar or chutney or both!!
