Welcome to Edible Creations! Today's recipe is Ragi Chocolate Pancakes .

*Ragi chocolate pancakes* are soft, fluffy pancakes made with nutrient-rich ragi (finger millet) flour, whole wheat flour, and cocoa powder. Naturally sweetened with jaggery and cooked without refined flour or sugar, they’re a healthy twist on classic chocolate pancakes. Packed with fiber, calcium, and iron, they make for a guilt-free, wholesome breakfast or snack – especially loved by kids and adults alike!

*Ragi Chocolate Pancakes*

*Ingredients:*

1 cup milk
½ tsp vinegar or lemon juice
½ cup ragi flour (finger millet flour)
½ cup whole wheat flour
2 tbsp cocoa powder
2 tbsp jaggery (powdered or melted)
½ tsp baking powder
¼ tsp baking soda
2 tbsp oil (plus more for cooking)

*Instructions:*

1. *Make buttermilk:*
In a bowl, mix milk and vinegar/lemon juice. Let it sit for 5–10 minutes until it curdles slightly.

2. *Mix dry ingredients:*
In a separate bowl, combine ragi flour, whole wheat flour, cocoa powder, jaggery, baking powder, and baking soda.

3. *Make the batter:*
Pour the curdled milk into the dry mixture. Add 2 tbsp oil and whisk until you get a smooth batter. Add a splash of milk if it's too thick. The batter should be pourable but not runny.

4. *Cook the pancakes:*
Heat a non-stick pan on medium heat. Lightly grease it with oil. Pour a ladleful of batter and spread slightly. Cook for 1–2 minutes until bubbles appear. Flip and cook the other side until done.

5. *Serve warm:*
Serve the pancakes warm with honey, maple syrup, nut butter, or fresh fruits.
