How to make pickled garlic
1. Pour a mixture of apple cider vinegar, water and salt over peeled garlic cloves.
2. Store in a sealed jar in the refrigerator for 1-2 weeks.
3. Use as a snack or addition to salads.

How to make fermented (black) garlic at home
What you need:
1. Whole garlic heads (with skin).
2. Slow warmer (multicooker, yogurt maker or dehydrator with a keep-warm function).
3. Foil or cling film (optional).
Instructions:
1. Selecting the garlic: Use fresh, undamaged, medium to large garlic. You want the cloves to be uniform in size.
2. Prep: Trim the stems off the garlic cloves, but leave the skins on. This will prevent them from drying out.
3. Wrapping (optional): Wrap each head of garlic in foil or cling film to retain moisture. This step is optional, but it helps ensure a more even result.
4. Fermentation:
Place the garlic cloves in a slow cooker that can maintain a steady temperature of 130–140°F (this is key!).
If you have a slow cooker, set it to the “keep warm” setting (usually around 130°F).
If you are using a dehydrator, set it to the same temperature.
5. Fermentation time: This process takes 2–3 weeks. During this time, the garlic will turn black, soft, and have a sweet, caramel-like flavor. It is important to maintain a stable temperature and humidity.
6. Check for doneness: After 2 weeks, check one head. The cloves should be black, soft, with a chewy-gum texture and a sweet aroma. If the garlic is not soft enough, leave it for a few more days.
7. Store: Store cooked black garlic in an airtight container in the refrigerator for up to 3 months.
