Today, I will be making Stir-Fried Bok Choy with Mushrooms, 香菇青菜. The ingredients are basically Bok Choy, black mushrooms and oyster sauce.
Let’s start it.
Soak the dry mushrooms overnight!
Coarsely slice to thick pieces, about 1.5 centimeters.
Cut Bok Choy from the middle of the stem.
Add a few drops of oil to water and bring it up to boil.
Put stems in boiling water for a while then the leaves.
Cook only 1-2 minutes then leave the heat.
Drain off water.
Then we add mushrooms. Cook till boil then take out.
Add 1tbsp of oil to a clean wok,
Add 1tbsp of garlic,
Add Bok choy. Stir-fry quickly about 1 minute. Add 1 tsp of salt.
Then take out and plate.
Add 1 tbsp of oil, and 1 tbsp of garlic.
Add sliced black mushrooms.
2tbsp of oyster sauce. 2 tsp of sugar, 1tsp of white pepper powder.
Stir fry quickly about 1 minute. Dissolve 1 tsp of corn starch in water then add to mushrooms. Stir a little bit then we are done!
Top the Bok choy with mushrooms.
It’s ready to serve!

Black Mushrooms 冬菇 3.5oz/100克
Chopped Garlic 蒜末 2tbsp/20克
Oyster Sauce 蚝油 2tbsp/50克
Sugar 糖 2tsp/10克
White Pepper Powder 1tsp/5克
Corn Starch 玉米淀粉 2tsp/5克
Salt 盐 1tsp/6克
