Trimming the surface fat off sirloin flap meat. This product will be used for steak tips.

The yield was as follows for a 4.5lb piece of meat:

3lb 4oz steak tips
10oz fat/un-usable
6oz useable scraps

78% yeild (86% if adding the clean scrap meat)

This means off a 35lb case of meat you should end up with 27lbs of steak tips.

Some notes: don’t gouge the meat. Don’t use anything thinner than your thumb as tips. Use the jackets before dicing for tenderness.
