Who doesn’t love a good baked potato full of your favorite toppings covered with cheese ! This is an easy recipe perfect for lunch, dinner and meal prep.

🔹ingredients: (2 serving)
2 russet potato.
2 tsp olive oil.
Kalamata olives.
Cooked corn.
Red onion.
1 cup shredded cheddar cheese.
1 Tbsp butter.
Salt and black pepper to taste.

🔹instructions:
▪️Brush the potato with olive oil, and prick the top with a fork. Bake in preheated oven to 425 F° for 45-60 minutes or until fully cooked.
using a spoon, gently scoop out the inside flesh of the potato, reserve the skin.
Mix the potato flesh with olives, corn, onion, cheese and butter, then transfer the potato mixture back into the potato skin, add more cheese and bake for 5 minutes or until the cheese is melted. Enjoy!
