It's time to learn how to cook tofu for us beginner's (me included as I've been making more tofu lately this past year). It's a great beginner's guide to tofu for those who are looking for ideas on how to cook tofu and understand the types of tofu out there. Tofu Rice Bowl:
-Super or Extra Firm Tofu (pressed), sliced longways in half, then into 3 or 4 sections; squares will work too
-3 tbsp coconut aminos
-3 tbsp smokey coconut aminos (if you can't find it at Trader Joes, then you can use 1 tbsp liquid smoke)
-1 tsp mushroom powder
-1/2 tsp onion salt (or 1 tsp onion powder, 1/2 tsp salt)
-Olive oil
-4-5 garlic cloves, thinly sliced or minced
-2 green onion stalk (use white part for cooking and green part for garnish)
-1/2 tsp salt (use as necessary)
-1/2 tsp black pepper
Press the tofu for at least 25-30 minutes with a clean kitchen towel and something heavy on top OR tofu press. Make the sauce. In a large skillet, add olive oil and bring to medium high heat. Cook tofu on each side for 2-3 minutes until brown, then add garlic and white part of the green onion, then sauce. Lower to medium heat and finish off cooking until the tofu is coated nicely with the sauce. Add on a bed of your favorite rice (I used Forbidden rice)

Tofu Scramble:
-Firm tofu, frozen and defrosted, break up into pieces with hands
-1 tsp garlic or onion powder (both are good too)
-1 tsp onion salt (or salt)
-1/2 tsp cumin
-1/2 tsp turmeric (KEY INGREDIENT)
-1/4 ts black pepper
-2-3 tbsp olive oil or avocado oil
Saute in a large skillet on medium high heat for about 5-8 minutes until the tofu softens slightly.

Firecracker Tofu Wings:
-Super or Extra Firm Tofu (pressed), sliced halfway once, then 4 sections making into long pieces
-Sriracha and Roasted Garlic BBQ sauce (from Trader Joes)
-2-3 cups gluten-free panko bread crumbs or rice crumbs
-1/2 tsp garlic powder
-1/2 tsp black pepper
-Olive oil spray (optional, will make tofu crispier)
-Jalapeno or green onion garnish
Dip tofu strips in sauce, then coat in panko with seasoning. Bake at 400 degrees F for 20-25 minutes or until crispy. Brush sauce on top and broil for 1-2 minutes or until crispy.
