1 tbsp Chinese brown cane sugar
1 tbsp Chinese preserved dried shrimp (rinsed)
4 tsp salt
1-2 tbsp soy sauce
2 tsp Chinese oyster sauce
2 tsp chicken stock powder
1 tsp sesame oil
Black and white sesame seeds (for garnish)
Fresh green onions (for garnish)

Instructions:

Prep the Ingredients:

Peel and finely chop the white turnips. Chop them into rounds, then dice them up (this saves time compared to grating).
Soak the Chinese black mushrooms in hot water for 15 minutes, squeeze out excess water, and dice them.
Steam the sun-dried preserved pork for 15 minutes, remove the rinds, and dice them up.
Boil the peanuts for 5 minutes, soak them for 4 hours, and set aside.
Make the Batter:

In a large bowl, mix rice flour and cornstarch.
Slowly add 250 ml cold water, stirring until smooth and thick. It should be like pancake batter—thick but pourable.
Cook the Turnip Mixture:

Heat some oil in a wok on medium heat, add ginger slices, then stir in the preserved pork, mushrooms, and peanuts.
Add the chopped turnips and cook for about 5 minutes, stirring occasionally. The turnips will soften and release their juices.
Season with salt, a dash of soy sauce, Chinese oyster sauce, and add cane sugar and dried shrimp.
Stir everything together, then add 250 ml of water. Cook for another 15-30 minutes until everything softens and blends together.
Combine and Prepare for Steaming:

Add chicken stock and sesame oil, then stir in the turnip mixture to the batter.
Prepare your steamer and brush oil on your trays (porcelain or baking trays work best). Pour in the mixture, smoothing it out with a spatula to eliminate air bubbles.
Steam:

Carefully place the trays in the steamer. Steam for about 1 hour and 15 minutes.
To check if it's done, insert chopsticks into the cake—if nothing sticks, it’s ready!
Garnish and Serve:

Once steamed, let the turnip cakes cool for about 1-1.5 hours.
Garnish with black and white sesame seeds and chopped green onions.
You can eat it as is, or for the traditional fried version, slice it, freeze it, and lightly fry it when you're ready to serve. Yum!
