Finally, Finnish rye bread! 📣

Many have asked me for a recipe for this staple of Finnish cuisine.

My recipe is so called "quick and dirty" because I use ready-made Finncrisps to make a starter but also yeast and sugar to make the dough rise faster.

You can also use your favorite Ruispalat, try to break it to very small pieces.

I bake already on 3rd day after starting the starter, so this is considered quick for rye bread with starter.

You can also give 2 more days of fermenting and feeding time for the starter, I experimented with Ruispalat starter and that really made rye bread I cannot stop eating.. 😋

Please notice that this dough is small, only about 10-12 pieces of bread + dough starter for the next baking. You can double the recipe when needed, or if you want to make also a loaf or reikäleipä (the flat one with a hole in the middle)
