Homemade Wheat Noodles

Servings - 3

INGREDIENTS
Whole wheat flour - 250 grams
Salt - 1/2 teaspoon
Oil - 1 tablespoon
Water - 260 milliliters
Water - 1.5 litre

Garlic - 1 1/2 tablespoons
Green chili - 2 teaspoons
Spring onions - 2 tablespoons
Onions - 40 grams
Bell pepper - 60 grams
Green beans - 30 grams
Cabbage - 20 grams
Carrots - 40 grams
Salt - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Paprika - 1/4 teaspoon
Schezwan chutney - 2 tablespoons
Ketchup - 1 tablespoon
Vinegar - 2 teaspoons
Water - 50 milliliters
Green spring onions - 1 tablespoon
Green spring onions - for garnishing

PREPARATION
1. In a bowl, add 250 grams whole wheat flour, 1/2 teaspoon salt, 1 tablespoon oil, 260 milliliters water and knead it into a dough.
2. Cover it with cloth and rest for 15 - 20 minutes.
3. Take a ball from dough and dust some whole wheat flour on it.
4. Now, make it flatten with the help of rolling pin and cut it into long strips. (See video)
5. Place it on a plate and keep aside.
6. Take a pan, add 1.5 litre water, 1 tablespoon oil, 1/2 teaspoon salt and bring it to a boil.
7. Add prepared noodles and boil for 4 - 5 minutes.
8. Remove it from heat and strain it.
9. Heat 2 tablespoons oil in pan, add 1 1/2 tablespoons garlic, 2 teaspoons green chili, 2 tablespoons spring onion and stir well.
10. Add 40 grams onions, 60 grams bell pepper, 30 grams green beans, 20 grams cabbage, 40 grams carrot and cook for 3 - 4 minutes.
11. Add 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon paprika and mix t well.
12. Add 2 tablespoons schezwan chutney, 1 tablespoon ketchup, 2 teaspoons vinegar, 50 milliliters water and cook for 1 - 2 minutes.
13. Add boiled atta noodles and cook for 1 minute.
14. Add 1 tablespoon green spring onions and cook for 2 - 3 minutes. Remove it from heat.
15. Garnish with green spring onions.
16. Serve hot.
