✅ Ingredients:
• spinach – 16 oz | 450 g
• potato – 10 oz | 270 g
• bulb onion – 5,5 oz | 160 g
• vegetable, chicken or beef broth – 4 cup | 1L
• 10 mint leaves
• garlic – 2 cloves
• juice of - ¼ lemon
• olive oil – 2 tbsp
• vegetable oil – 2 tbsp
• salt – 1 tsp
• ground black pepper - ⅓ tsp

✔︎ You will need:
• saucepan or stockpot
• carving board
• blender

📙 Preparation:
1. Heat a saucepan with the vegetable oil and fry the chopped bulb onion until lucent over low heat for about 3 minutes.
2. Add the minced garlic and fry for a minute more.
3. Add the cut potato and broth, bring to a boil, cover with a lid and cook for 15 minutes over low heat.
4. Add the spinach, mint leaves, salt and ground black pepper, cook over low heat for 4 minutes.
5. Switch the heat off and crush the soup with an immersion blender until smooth.
6. Add the lemon juice and olive oil and mix with the blender.
7. Serve the spinach soup with cream or sour cream, vegetable chips or sun-dried tomatoes having drizzled with some olive oil.
