Cherry Pastry Pies

Ingredients:
• 10 squares of puff pastry (for 5 pastries, using 2 squares each)
• 1/2-1 cup cherry fruit spread with cherry pieces
• 4 oz (115g) cream cheese, softened
• 1/4 cup powdered sugar
• 1 egg (for egg wash)
• 2 tablespoons granulated brown sugar (optional, for sprinkling on top)
• Flour (for dusting)

Instructions:
• Preheat your oven to 375°F (190°C).
•Lightly dust your work surface with flour. Lay out the puff pastry squares, and slightly roll them out if needed to ensure they are evenly sized.
• In a small bowl, mix the softened cream cheese with the powdered sugar until smooth.
• Place a generous spoonful of the cream cheese mixture in the center of 5 of the squares. Then, add a generous spoonful of cherry fruit spread with cherry pieces on top of the cream cheese. Leave a small border around the edges to seal the pies.
• Using a sharp knife, cut a few small slits or create decorative patterns on each top pastry square.
• Place the top 5 squares of puff pastry on top of the filled squares. Press down the edges with a fork to seal the pies, creating a crimped edge.
• In a small bowl, beat the egg and brush the tops of each pastry pie.
• Sprinkle a little granulated brown sugar on top of the pastries for added sweetness and crunch.
• Place the pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until the pastries are puffed up and golden brown.
• Allow the pastries to cool slightly on a wire rack before serving.
