Oxtails (Instant Pot)

Oxtails (2 packs)
Green bell pepper, diced
Red bell pepper, diced
Yellow bell pepper, diced
Onion, diced
3 garlic cloves or minced garlic
Green onion, 2 stalks
Scotch bonnet or habanero pepper
3 tbs green seasoning
2 tbs browning sauce
2 tbs soy sauce
Fresh thyme (2-3 sprigs)
Seasonings: sazon, S&P, Adobe all purpose seasoning.

3 tbs olive oil
3 tbs brown sugar
Beef broth
Butter beans, strained
2 bay leaves
2 tbs ketchup
Cornstarch slurry ( 1/4 cup equal parts)

💓Clean your meat & veggies. Add your oxtails & the first list of ingredients to a bowl & marinade overnight or at least an hr.
💓Set instant pot to Sauté mode & add olive oil & brown sugar. *Sear oxtails in batches (3-4 min per side). Remove from instant pot. Add marinade & cook down until veggies are softened (about 3-4 min).
💓Add beef broth. How much depends on how much gravy you want. Bring to a boil & add oxtails back in. Add bay leaves. Turn OFF sauté mode. Put top on instant pot, making sure valve is closed, & pressure cook for 45 min. Slow release for 20 min.
💓Add ketchup & butter beans. Add cornstarch slurry & sauté for 20 min. **Enjoy!

*make sure u have plenty of olive oil or the bottom of pan will burn.

**you can strain the gravy before serving if desired.
