Avial Recipe | How to make perfect Avial | Avial recipe Kerala Style
Avial is a mixed vegetable curry from south India. It is with coconut and curd as base.

Kerala Style Avial Ingredients
1 Drumstick cut all vegetables into 2.5 to 3 inch length
1 Carrot
1 Potato small sized
9 Green bean or ½ cup Pyathangai/ long beans
½ cup Snake gourd
½ cup Elephant yam
½ cup Ash gourd
½ cup Plantain
½ cup Yellow pumpkin
3 tablespoon Curd
1 sprig Curry leaves
2 tbsp Coconut oil
To grind
1 cup Coconut
1 teaspoon Cumin seeds
2 Green chillies
Method
Firstly, place 1 drumstick, 9 beans, ½ cup elephant yam and snake gourd in a broad heavy bottomed vessel. Add ¾ cup water for these vegetables.
Then mix gently and bring to boil. Cook covered for 4-5 minutes in medium flame.
Let the vegetables get cooked half way through.
Now add the rest of the vegetables, ¼ cup more water and salt as needed for the vegetables. Mix well to coat evenly. Cook covered furthermore in low flame for 7-8 minutes or until the vegetables are done.
Meanwhile, add 1 cup coconut, 2 green chillies and 1 teaspoon of cumin seeds in the mixer.
Grind to a coarse mixture without any water. Make sure to mix in between once to ensure the cumin seeds are blended evenly.
Take care not to over cook the vegetables. Now add the ground coconut mixture.
Mix to coat the vegetables evenly and cook furthermore for 2 minutes in low heat.
Switch off the stove and add 3 tablespoons of smoothly beaten curd. Mix gently to coat all the vegetables, without making it mushy.
Finally add 2 tablespoons of coconut oil.
Kerala style Avial is ready!
Notes
You can make avial with simply carrot, beans, potato, drumstick, ash gourd alone too.
Adding more plantain/ vazhakkai makes the avial dark in colour.
Add mango in avial towards end and skip curd for a vegan version of aviyal.
CUP MEASUREMENTS
Measurements used in all the recipes, unless otherwise specified. My cup measurements are as follows:
1 Cup = 240 ml
½ Cup = 120 ml
¼ cup = 60 ml
⅛ cup = 30 ml
1 Teaspoon teaspoon = 5 ml
1 Tablespoon (tbsp) = 3 teaspoon = 15 ml
2 Tablespoon = 30 ml = ⅛ cup
4 Tablespoon = 60 ml = ¼ cup
