Why do some keyboardists play with a more "pure", "classical" sound, while others play with a more "contemporary" sound?

This video shows you why.

I named the technique "Everlasting 1 and 5" because you could actually try playing 1 and 5 of the scale degree THROUGHOUT and the songs would still work! Although I would recommend that for chord V (five), you deviate from the tonic note.
