Regular ribs are awesome, but every now and then, it’s time to ramp things up with my Competition Style Ribs. This recipe cooks on a drum smoker in less than 4 hours, but the meat is as tender as if cooked low and slow. Ingredients:
• Prairie Fresh Prime Baby Back Ribs
• Mustard
• Heath Riles BBQ Garlic Jalapeño Rub
• Heath Riles BBQ Competition BBQ Rub
• Heath Riles BBQ Butter Bath & Wrap (¼ cup PER SLAB of ribs)
• 16 ounces water
• ½ cup Heath Riles BBQ Sweet BBQ Sauce
• ½ cup Heath Riles BBQ Competition BBQ Sauce
• ½ cup Heath Riles BBQ Apple Habanero BBQ Glaze

Directions:
1. Stoke the Gateway Drum Smoker with Royal Oak Lump Charcoal and some Royal Oak Tumbleweeds and fire it up to a range of 300℉.
2. Trim the Competition Style Ribs, removing any stray pieces of bone, hard meat flaps, discoloration, excess fat, and the membrane.
3. Using a gloved hand, apply a layer of mustard to the ribs and dust them with Heath Riles BBQ Garlic Jalapeño Rub and Heath Riles BBQ Competition BBQ Rub. Flip the ribs over and repeat the process on the other side.
4. Lay the ribs directly on the Gateway Drum Smoker's grates and let them cook for 40 minutes, twisting the grill’s grates at the 20-minute mark. Flip the Competition Style Ribs over and let them cook for 40 more minutes, spinning them at the halfway mark.
5. To make the wrap, combine ½ cup Heath Riles BBQ Butter Bath & Wrap with 16 ounces of water until smooth. This amount covers two slabs of ribs, so adjust the quantity if you’re smoking more or less meat.
6. Double-line a large aluminum baking pan with tin foil and lay the Competition Style Ribs on top. Pour the butter bath over the top and tightly wrap the ribs.
7. Lay the wrapped ribs on the Gateway Drum Smoker and let them cook for 40 minutes, spinning them at the halfway mark.
8. To create a delicious rib glaze, I combine equal parts Heath Riles BBQ Competition BBQ Sauce, Heath Riles BBQ Sweet BBQ Sauce, and Heath Riles BBQ Apple Habanero BBQ Glaze in a small aluminum pan.
9. Take the ribs off the grill and let them rest for 20 minutes while the glaze warms over the fire.
10. Once the ribs are done resting, unwrap and sauce them. Dust the Competition Style Ribs with Heath Riles BBQ Competition BBQ Sauce.
11. Set the meat back on the Gateway Drum Smoker to tack up for 15 minutes, then pull them off the pit. Let cool before digging in. Enjoy!
