Spanish Potato Omelette (Spanish Tortilla/Spanish Omlet) is perfect served hot or cold, and so easy to make! Fried potatoes, onions and eggs make up this popular Spanish Tortilla recipe. --Ingredients

Potato 1 cup
Onion 1 cup
Egg 3
Coriander leaves a handfull
Salt 1 tsp
Black pepper powder 1/2 tsp
Oil/Butter as required

--Instruction

Take a non stick pan and once the pan is hot add oil or butter.
Once the oil is hot, add chopped onion and saute a minute.
Add chopped potatoes and saute.
Cover with a lid and cook for 4-5 mintues on low heat.
After 4-5 minutes, open the lid and saute, once the potatoes and onions turn soft, its transferred to a mixing bowl.
Add 3 eggs(if you want to add more eggs, you can!) , a handful of chopped coriander leaves, salt and black pepper powder as required.
Mix and whisk well.

--Final Preparation

Take a non stick pan. Once the pan is hot, add butter/oil. Spread the oil on the pan and once the oil is hot, pour the mix on the pan and spread well.
Reduce to low heat and cook for 3-4 minutes.
When the sides turn light brown, then flip to the other side.
Cover the pan with a large plate and carefully turn the omelet out onto the plate, then slide the omelete back into the pan and fry for another 3-5 minutes over low heat.
nce both sides are proper cooked, carefully transfer the omelet out onto the plate.
Serve hot....!!
