Ingredients:
For Chilli Paneer
• 250 g paneer (cut into cubes)
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp ginger-garlic paste
• 1 tsp Kashmiri red chilli powder
• 4 tsp corn flour (or as required)
• Oil (for shallow frying or deep frying)
• 1 onion (cubed & layers separated)
• 1 yellow bell pepper (cubed)
• 1 red bell pepper (cubed)
• 1 green capsicum (cubed)
• 2 spring onions (greens & whites separated)
• 6–7 garlic cloves (chopped)
• 1 green chilli (sliced)
• 1 tsp red chilli sauce
• 1.5 tsp tomato ketchup
• 1 tsp soy sauce
• 1 tsp vinegar
• 1 tsp salt (or as per taste)
• Cornflour slurry (1 tsp cornflour mixed with water)
For Veg Fried Rice
• 2 cups boiled and cooled rice
• 1 small carrot (finely chopped)
• 1 handful beans (finely chopped)
• ¼ cup sweet corn
• 1 onion bulb (white portion of spring onion, chopped)
• ½ red bell pepper (chopped)
• ½ yellow bell pepper (chopped)
• ½ green capsicum (chopped)
• 1 tbsp chopped ginger-garlic
• 1 tbsp schezwan chutney
• 1 tsp tomato ketchup
• 1 tsp soy sauce
• 1 tsp vinegar
• 1 tsp salt
• 1 tsp black pepper
• Spring onion greens (for garnish)
• Oil (for stir-frying)
Recipe:
To prepare Chilli Paneer, cut 250 g paneer into cubes. In a bowl, add salt, black pepper, ginger-garlic paste, Kashmiri red chilli powder, and 3 tsp cornflour. Mix gently so the paneer doesn’t break. Add 1 more tsp cornflour if required and coat well. Heat oil in a pan and shallow fry (or deep fry) the paneer pieces until golden brown.
Next, in a wok, heat some oil and sauté chopped garlic, onion, and green chilli on high flame until the onions turn pink. Add capsicum, bell peppers, salt, red chilli sauce, tomato ketchup, soy sauce, and vinegar. Toss on high heat without overcooking. Add a little water and let it boil. Prepare a cornflour slurry and add it gradually to thicken the sauce. Once the gravy is ready, add the fried paneer pieces along with spring onion greens. Toss well. Your hot and delicious Chilli Paneer is ready.
For Veg Fried Rice, heat oil in a wok and add chopped ginger-garlic. Then add all the chopped vegetables – carrot, beans, corn, bell peppers, and spring onion whites. Add salt, black pepper, soy sauce, vinegar, tomato ketchup, and schezwan chutney. Stir-fry on high flame for a few seconds and then add boiled rice. Toss well on high heat until everything mixes evenly. Finally, add spring onion greens, give it one last toss, and serve hot with Chilli Paneer.
