Hi guys, today I am eating my homemade 24 layer Unicorn Crepe Cake.

Here is the recipe I used for the crepes (below is for 12-14 serving, adjust if you want more, I used double this amount for mine):

1 1/2 cups (210 g) unbleached all-purpose flour
3 tbsp (40 g) sugar
1/2 tsp baking powder
1/4 tsp salt
3 eggs
2 1/4 cups (560 ml) milk
1/2 tsp (2.5 ml) vanilla extract
Food coloring (whatever color you like)

In a bowl, combine the flour, sugar, baking powder and salt. Add the eggs, 1 cup (250 ml) of the milk and the vanilla. Stir with a whisk until smooth. Gradually stir in the remaining milk (1 1/4 cups/310 ml).
Divide the batter into 4 bowls or however many colors you want to use and add food coloring to each bowl.
In an 8-inch (20 cm) non-stick skillet brushed with butter over medium heat, cook the crepes about 1 min on one side and flip over and 30 sec on the other side, using about 1/4 cup (60 ml) of batter per crepe. Place the crepes on a baking sheet lined with parchment paper as you go. Cover with plastic wrap and let cool completely.

And for the filling:
1 cup (16 Tbsp) unsalted butter, softened at room temperature
12 oz sweetened condensed milk (from a 14 oz can – filled by weight)
8 oz cream cheese, softened at room temperature
2 tsp vanilla extract

In the bowl of a stand mixer fitted with whisk attachment, beat butter and condensed milk with whisk attachment on high speed 7 minutes. It should look whipped and lightened in color.
Add 8 oz of softened cream cheese 1 Tbsp at a time while mixing on medium high speed. Continue beating for 3 minutes or until no longer lumpy. Add 2 tsp vanilla and whisk until well incorporated and smooth.

After assembling crepe cake layers with filling, refrigerate cake for at least 6 hours or until filling has firmed up.

Coconut Sauce Recipe:

In a saucepan, whisk 1 cup of coconut milk, 2 pinch of salt, 1 tbs sugar, 3 tbs water over medium heat and bring to a simmer. I stir in 1 1/2 tsp cornstarch (dissolved in 2 tsp water), keep stirring until sauce thickens and remove from heat. Let the sauce cool before eating or you can eat it warm. I usually add more sugar if you want it a little sweeter.
