Pickles is every day staple condiment at my place ..Bitter gourd is one vegetable not liked by many for obvious reason of bitterness but bitter gourd/karela/karathe has many health benefits including blood purification.. If bitter gourd recipes balanced well with sour and sweet agent it taste really good . this pickle is best served with Rice or Parathas.. any Indian meal will not be complete without pickle..

Ingredients

1) 2-3 Big Bitter gourd peeled and chopped in to tiny bits
2) 3tbsp + 2tsp Sesame Oil or Regular Oil

Pickle Masala
1) Salt as required
2) 15 dry Red chilies
3) 2tsp Mustard seeds
4) 1/4 tsp compound Asafoetida/Hing(if using powder add 2 tsp )
5) 1/4 tsp fenugreek seeds/Methi seeds
6) 1tsp Urad dal
7) 10-12 Curry leaves
8) Lemon sized tamarind soaked 1 Cup water
9) 2-3tbsp Jaggery
