Pop’s Latkes

4 large potatoes
1 large onion
1 large egg
1 garlic clove
Salt
Pepper
1 container of matzo meal
Oil for frying
Sour cream and/or applesauce to serve

Peel the potatoes and onion and then cut them into rustic chunks. Place them in a blender with the egg and a pinch of salt and a few twists of pepper. Blend them until fully smooth, adding a splash of water if necessary.

Pour the mixture into a bowl and add matzo meal until it has the texture of a semi-wet batter.

Set up a frying pan with an inch or so of oil, and a sheet pan with a wire rack, or paper towels. Heat the oil until the batter will sizzle but not burn when it hits the oil.

Scoop ½ cup or portions of the batter into the oil and fry it in batches, pressing it down slightly into a rounded, flat-ish shape, while maintaining oil temperature. Once the bottom is golden brown, flip it over carefully and repeat it with the other side. Once cooked, transfer them to the rack or paper towels and sprinkle with salt.

Repeat with the remaining batter. Serve with applesauce and/or sour cream.
