Traditionally enjoyed on Dussehra, this crispy snack is often paired with sweets and desserts, making it a festive favorite. Today, I'm excited to share Saurashtra version of the Rajwadi Fafda Gathiya Recipe, inspired by a traditional recipe from Rajkot.

INGREDIENTS:
FAFDA
2 tbsp Black Pepper, काली मिर्च
1.5 tsp Ajwain, अजवाइन
25 ml Oil, तेल
25 ml Water, पानी
3 grams Papadkhar, पापडखार
8 grams (3/4 tsp) Salt, नमक
250 grams Besan, बेसन
½ tsp Ajwain, अजवाइन
15 ml Water, पानी
1 tsp Oil, तेल

KADHI
2 tsp Besan, बेसन
1 cup Buttermilk, छाछ
2 tbsp Oil, तेल
½ tsp Mustard, राय
½ tsp Cumin, जीरा
½ tsp Dry Coriander, सुखा धनिया
Curry Leaves, कड़ी पत्ते
⅛ tsp Hing, हिंग
2 nos. chopped Green Chilies, हरी मिर्च
½ inch Chopped Ginger, अदरक
1 glass Water, पानी
¼ tsp Turmeric, हल्दी
½ tsp Salt, नमक
2 tsp Sugar, चीनी

PAPAYA SAMBHARO
¼ part Papaya, पपीता
Chopped Coriander, हरा धनिया
½ tsp Red Chilli, लाल मिर्च
1 tsp Hing, हिंग
½ tsp Salt, नमक
1 tsp Sugar, चीनी
1 tsp Oil, तेल
