Ingredients:
Methi Muthiya :
1/2 Cup - Wheat Flour Coarse
1/4 Cup - Besan
1 Cup - Methi Chopped ( Fenugreek Leaves Chopped )
1/4 Cup - Corainder Leaves Chopped
1/4 Cup - Green Garlic Chopped
1/2 tbsp - Green Chilli Ginger Paste
1 tsp - Sesame
1 tsp - Carom Seeds ( Ajwain )
1/4 tsp - Turmeric Powder
Salt to taste
2 tbsp - Sugar Powder
1/4 tsp - Asafoetida ( Hing )
2 tbsp - Peanut Oil
Mix with hand Properly
Pinch - Baking Soda
1/2 tbsp - Lemon Juice
1 tbsp - Water
Mix everything and make dough and make a muthiya Oval Shape or Round Shapeand fry them Properly

250 - 300 gm - Take a Baby Potatoes and peel them and make a Two Halves ane fry till golden

1 Cup - Take Fresh Garlic , Romove Upper Part , Keep leaves Part Seperate and Chop finely

250 - 300 gm Sweet Potato Peel them and Cut into Roundles and Fry them till Golden

250-300 gm - Take A Ratalu ( Kand ) ( Purple Yum )
Make Big Cubes and Fry till Golden

500 gm - Take a Papdi Remove Stem and Peel and Seperate into Two

Take a Pressure Cooker
3 tbsp - Oil
1 tsp - Ajwain ( Carom Seeds )
1/2 tsp - Asafoetida
3 no - Dry Chilli Whole
1/4 Cup - Garlic Chopped or Crushed
Saute little bit
add Above Papadi
1/4 tsp - Turmeric Powder
Salt to taste
Mix all the things
1+1/2 Cup - Water
Pinch - Baking Soda
Mix everything and Give Two Whistle in Cooker
and after release air immediately open the cooker

Masala :
Take a Big Bowl
1 Cup - Fresh Coconut Grinded
1+1/4 Cup - Corainder Leaves Chopped
1 Cup - Green Garlic Leaves Chopped
1 tbsp - Garlic Paste ( Fresh Garlic )
3 tbsp - Ginger Chilli Paste Big ( Approx 1/4 Cup )
1 tbsp - Sesame
3 tbsp - Peanut Crushed
1/2 tbsp - Corainder Cumin Powder
Salt to taste
1 tbsp - Sugar Powder
3 no - Fried Muthiya Crushed
3-4 tbsp - Oil
1/2 tsp - Asafoetida ( Hing )
Mix all together
1 tsp - Garam Masala Powder

Take a Big Bowl ,Mix all fried Vegetables and add above Masala 3/4 Cup , Mix everything and Keep aside

Take a
8 no - Small Green Brinjals
and Stuff above Masala

Switch On the Gas and Take a Big Vassel
1/2 Cup - Oil
and add above Stuffed Brinjal
Cook in slow Flame till 1/2 done and add above
Cooked Papadi , spread over the Brinjal
then Fried Vegetables , Spread Layering wise
And Spread Above Green Masala
Cook everything in slow flame and Close the lid and cook till little done
Cook for 10-12 min in Slow Flame

But After 5-7 Min , add Muthiya and again close the lid and cook for 3-4 min

Take a Hard Yellow banana make a Big Round cut from middle and stuff above green masala

Lastly add above banana and Sprinkle Rest of the masala and close the lid amd again cook for 2-3 min
and add 2-3 tnsp Water and Close the lid for 3-4 Min again

Total it will Prepare in 12-15 min
Garnish with Green Garlic Chopped and Corainder Leaves Chopped amd little mix it and Serve
again Garnish with Grren Garlic

Serve With Green Garlic Matha

Malai Recipe : Take a Full fat milk and Heat and cook till boil and rest till room temperature and Put into Fridge Over night and Take a above Malai and add powder sugar , Cardamom Powder and mix it and serve ,Garnish with Pista Flakes
