Biko Recipe (Filipino Sweet Sticky Rice Cake)

Is a Filipino sticky rice cake made from “malagkit”. This sweet sticky rice dessert is referred to as kakanin. It is often served as dessert or meryenda (snacks). This is also served during fiestas, birthdays, special occasions and holidays. Traditionally it is garnished with latik (coconut milk residue).

The rich flavor of biko comes from the coconut milk and sweetness from the brown sugar.

Biko Recipe

Ingredients
3 cups glutinous rice (malagkit)
2 ½ cups Coconut milk
¾ cup brown sugar
3 cups water (for cooking glutinous rice)

Procedure
1. Put glutinous rice in a pot and rinse. Drain
2. Add water and bring to a boil. Then lower the heat and let it simmer until the water is fully absorbed by the rice.
3. In a pan over medium heat, dissolve brown sugar and coconut milk let it boil until thick. Add the steamed rice and mix until it thickens.
