Curd Vada - Recipe
Ingredients: For Vada Batter
Urad Dal - 1 cup
Salt
Little Water - 2 or 3 tbsp
Curd/Dahi - 3 cups
Salt to taste
Oil for frying
Garnish with Coriander leaves
Grated carrot - 2 tbsp
For Tempering:
Oil - 1 tsp
Mustard seeds - 1/2 tsp
Cumin - 1/2 tsp
Asafoetida powder - 1/8 tsp
Chili Ginger paste - 1 tbsp
Few Curry leaves
Method:
1. Soak urad dal in water for 4 hours
2. Grind the soaked dal in to a smooth thick batter. Add little water if needed
3. Beat the smooth batter for few minutes till it is soft and fluffy.
4. Whisk 1/2 cup curd and add water and salt to make buttermilk.
5. Wet your hands. take a small lemon sized batter and flat it on palms. Make holes in the center.
6. Gently slip in to oil and deep fry on a medium flame till its golden brown in color
7. Remove from oil when done.
8. Dip the vada in the buttermilk. Allow it to soak.
9. Repeat the process with the remaining batter and dip the vadas in buttermilk.
10.Temper Cumin, mustard seeds, asafoetida powder, curry leaves and ginger chili paste in oil
11. Add the tempered ingredients to curd and whisk
12. Add salt, Grated carrot and coriander leaves and mix. Keep aside
13. Take the soaked vadas to the serving bowl and add the tempered curd
14. Soak in curd for 2 hours
