Carp Tokyo is a popular spot for Japanese street food Hiroshima-style Okonomiyaki in Tokyo.

Hiroshima-style Okonomiyaki are savory pancakes which layers of cabbage, bean sprouts, scallions, tempura scraps (tenkasu )pork back rib, noodle and egg and flour with a bit of dashi broth, some other topping squid and shrimp or cheese and topped with condiments like Japanese Worcestershire sauce, dried seaweed and so on.

You can find them throughout Japan, but they are regional cuisine in Osaka/Kansai and in Hiroshima. The main difference is that the Hiroshima-style will have noodles(Soba/Chinese noodle or Udon) as an optional ingredient and chef make them for you on a large griddle(Teppan). It took 10 minutes to make it this time.
When you cook at home, the Osaka-style is easier.

Okonomiyaki means “grilled as you like it” .
Okonomi(as you like it) Yaki (grill)
Spatula to flip or cut a Okonomiyaki is we call Kote or Hera or Teko. Some people eat Okonomiyaki with this. You can see in this video.
