Moru curry, also known as "Moru Kootan" or "Pulissery" in Kerala, is a traditional South Indian yogurt-based curry. It's tangy, mildly spiced, and often made with vegetables like ash gourd (white pumpkin), cucumber, or ripe mango Or without the vegetables. The dish gets its characteristic flavor from sour yogurt or buttermilk, spices, and sometimes turmeric for a golden-yellow hue.

The tempering (or tadka) is crucial to the flavor of Moru curry. It typically involves mustard seeds, dried red chilies, fenugreek seeds, ginger, garlic, shallots and curry leaves sautéed in coconut oil. The combination of yogurt's tanginess, and aromatic spices results in a comforting and refreshing dish, often served with rice.
