Check out this easy taco salad bowl recipe! It’s a quick and easy weeknight meal! I love using this recipe for meal prep. You can also make this low carb by opting for no tortilla or a low carb tortilla.

Serves 4 (4 taco salad bowls) but adjust as needed!

Ingredients:

1lb ground beef
1 tbsp taco seasoning
1 tbsp water
1 head iceberg lettuce
Re-fried beans (optional)
Mexican cheese or sharp cheddar or pepper jack
2 tomatoes
Half red onion
2 Avocados
Cilantro for garnish
4 Flour tortillas (10in) (more or less depending on how many people)
2 tbsp olive oil

Dressing:

1 cup sour cream
1/4 cup mayonnaise
1/4 cup packed cilantro
1-3 chipotle peppers in adobo sauce (see note)
1 tsp adobo sauce from can
2 cloves crushed garlic
1.5 tbsp lime juice
1/2 tsp each of onion powder, smoked paprika, ground cumin
1/4 teaspoon salt

Note: 1/2 chipotle pepper = mild; 1 = medium; 2+ spicy

Taco seasoning (This makes enough for several meals. You’ll use 1 tbsp of the below mix).

1 tbsp chili powder
1 tbsp smoked paprika
1/2 tbsp cumin
1/4 tsp cayenne pepper
1/2 tsp oregano powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
