Here’s a simple recipe for making Suji ke Rasgulle (Semolina Rasgullas):

Ingredients:
1 cup semolina (suji)
2 tablespoons ghee
1 cup milk
1 cup sugar
2 cups water
1/2 teaspoon cardamom powder
A few saffron strands (optional)
Chopped nuts for garnish (optional)
Instructions:
Prepare the Dough:
Heat ghee in a pan and add semolina. Roast it on low flame until it turns golden brown and aromatic.
Gradually add milk to the roasted semolina, stirring continuously to avoid lumps. Cook until the mixture thickens and leaves the sides of the pan.
Let the mixture cool slightly, then knead it into a smooth dough.
Shape the Rasgullas:
Divide the dough into small portions and shape them into smooth balls.
Prepare the Sugar Syrup:
In a separate pan, combine sugar and water. Bring it to a boil and let it simmer until the sugar dissolves completely.
Add cardamom powder and saffron strands to the syrup for flavor.
Cook the Rasgullas:
Gently drop the semolina balls into the boiling sugar syrup.
Cover and cook on medium flame for about 10-15 minutes, or until the rasgullas double in size and become spongy.
Serve:
Let the rasgullas cool in the syrup. Garnish with chopped nuts if desired.
Serve chilled or at room temperature.
