Essentially a dark rum mojito with bitters, if you haven't tried Trinidad & Tobago's national drink yet - you should! Invented at Trinidad's Queen's Park Hotel, you should technically use a swizzle stick made from forked branches of a south Caribbean evergreen tree, but we'll allow a bar spoon.

8 - 10 mint leaves
20ml (⅔ oz) sugar syrup
60ml (2oz) dark rum
30ml (1 oz) lime juice
4 dashes Angostura bitters
Glass: highball
Garnish: mint sprig
