Ingredients:
1 thick-cut sirloin steak (about 1 inch thick)
Salt (1/2 tsp)
Freshly ground black pepper (1/2 tsp)
1 tbsp olive oil
50g unsalted butter
3 cloves garlic (crushed)
2 sprigs rosemary
2 sprigs thyme

Instructions:
1. Prep the Steak:
Pat the steak dry with kitchen paper to remove any surface moisture.
Season generously on all sides with salt and pepper.
Drizzle with 1 tbsp olive oil and massage the seasoning and oil into the meat.
2. Sear the Steak:
Heat a pan on high heat.
Once the pan is hot, carefully place the steak in the pan away from you to avoid splatter.
Sear for 1 minute per side to get a good crust.
3. Add Flavour & Cook Through:
Reduce heat to medium.
Add butter, garlic, rosemary, and thyme to the pan.
As the butter melts, baste the steak by spooning the herby butter over it continuously for about 1 minute.
4. Cook to Medium:
For medium doneness, you're aiming for an internal temperature of 59°C (138° F).
Remove the steak from the heat when it reaches around 55°C (131°F) — it will finish cooking while resting.
5. Rest:
Transfer steak to a plate or board.
Rest for 3–4 minutes before slicing. This locks in the juices.
6. Serve:
Optionally spoon over the flavourful butter from the pan.
Enjoy your perfectly cooked, juicy medium sirloin steak!
