Bhindi Gosht is a flavorful and hearty dish combining tender pieces of meat (usually goat or lamb) with bhindi (okra) cooked in a rich and aromatic gravy. The meat is slow-cooked to perfection, allowing the spices to blend beautifully with the okra, creating a perfect balance of textures and flavors.

Ingredients:

• 500g goat/lamb (cut into pieces)
• 250g bhindi (okra), cut into 1-2 inch pieces
• 2 large onions, finely chopped
• 2 tomatoes, finely chopped
• 2-3 green chilies, slit
• 1 tablespoon ginger-garlic paste
• 1 teaspoon cumin seeds
• 1 teaspoon coriander powder
• 1 teaspoon red chili powder (adjust to taste)
• ½ teaspoon turmeric powder
• ½ teaspoon garam masala
• Salt, to taste
• 4-5 tablespoons oil (for frying bhindi)
• Fresh coriander leaves (for garnish)

Instructions:

1. Fry Bhindi: Heat some oil in a pan and shallow fry the bhindi until they are lightly golden and crisp. Remove and set aside.
2. Cook Meat: In the same pan, add cumin seeds and let them splutter. Add finely chopped onions and fry until golden brown. Add ginger-garlic paste and sauté until the raw smell disappears.
3. Add Spices and Meat: Add the chopped tomatoes, green chilies, coriander powder, red chili powder, turmeric powder, and salt. Cook until the oil separates from the masala. Add the meat pieces and sauté on medium heat, stirring occasionally, for about 10-15 minutes.
4. Slow Cook: Add water, cover, and let the meat simmer on low heat until it is tender and fully cooked. This may take 30-45 minutes depending on the type of meat and its tenderness.
5. Combine Bhindi and Meat: Once the meat is tender, add the fried bhindi to the meat curry. Mix well and let it cook together for another 5-10 minutes to allow the flavors to blend.
6. Garnish and Serve: Sprinkle garam masala and garnish with fresh coriander leaves. Serve hot with roti, naan, or rice.
