Ingredients
For the Beef:
1 Pound Beef Tenderloin pieces
2 Tablespoons Chili Rub (1 part ground Cumin, 2 parts Dark Chili Powder, 1/2 part ground Coriander, salt and pepper)
1 Tablespoon Light Olive Oil
For the Tex-Mex Salad:
2 Cups Lettuce (Iceberg or your choice of lettuce), chopped
1/2 Tablespoon Jalapeno
2 Each Roma Tomatoes, diced
4 Tablespoons red onions, thin sliced
1/4 Cup lime Vinaigrette (1 part Lime juice, 3 Parts Grapeseed oil, Agave or Honey to taste and salt and pepper to taste)
Optional: Tortilla crisps for garnish.

Instructions
Prepare the salad by tossing the salad mkings together in a big bowl.Sear the beef for color but cook only to medium rare.Arrange the greens on plates and top with beef.Sprinkle grated Manchego cheese over the top.Add tortilla crisps if needed.
