Panjiri

Ingredients:
Ghee 1 tbsp
Gum (Gondh) 1 cup

Ghee 1 tbsp
Fox Nut (Phool Makhana) 1 cup

Ghee 2 tbsp
Almonds 1 cup
Walnuts 1 cup
Cashew nuts 1 cup
Melon seeds (Charon maghaz) 1 cup
Desiccated coconut 1 cup
Pistachio 1 cup

Ghee 2 tbsp
Raisins 1 cup

Ghee 2 tbsp
Semolina 2 cups

Ingredients for Assembling:
Roasted gum
Roasted fox nuts
Roasted nuts
Roasted semolina
Icing sugar 1 cup
Roasted raisins

Directions:
1. In a pan heat ghee and add gum. Roast until it starts to bubble. Take off flame and set aside.
2. In the pan heat ghee and add fox nuts. Roast until they get crispy. Set aside.
3. In a pan heat ghee and roast almonds, walnuts, cashew nuts, melon seeds, pistachios and roast until fragrant.
4. Now add desiccated coconut and roast for 4-5 mins. Set aside.
5. In the pan heat semolina and cook until fragrant. Add ghee and roast until it turns brown. Set aside.
6. In the pan heat ghee and add raisins and roast until starts to bubble. Set aside.
7. Add roasted gum, roasted fox nuts in a grinder and grind them well. Take them out and set aside.
8. In the grinder add roasted almonds, cashew nuts, melon seeds, pistachios, and desiccated coconut, and grind them well. Take them out set aside.
9. In a bowl add roasted semolina, ground gum and fox nuts, ground nuts, leftover roasted nuts, roasted raisins, icing sugar and mix well. Your Panjiri is ready.
