From breakfast to dinner (and everything in between), I hope this gives you some ideas for your family. Some are hits, some are misses – I share it all honestly!
Breakfast: Sausage, Egg & Cheese Burritos
Ingredients:
6 sausage links (I like Applegate’s Savory Turkey)
3 eggs, whisked
Shredded cheese
6 street flour tortillas
Butter
Salt
Pepper
Directions:
1. Cook the sausage links until they are completely done. Transfer to a plate and add a bit of butter into the skillet. Add the eggs and cook on medium low heat, gently folding it into the center. Season with salt and pepper and remove from skillet. Be sure not to cook the eggs fully. A soft scramble is perfect for this recipe.
2. Microwave a flour tortilla for 8 seconds to make it soft and more pliable. Divide the scrambled eggs into 6 portions and add a portion to the flour tortilla, add cheese then top with a sausage link. Fold towards the center, folding the sides as you go. Repeat with the remaining 5 tortillas.
3. Melt a bit of butter in a skillet and place the tortillas folded side down. Cook for 2-3 minutes on medium heat until it has a sear and cheese has melted. Serve with salsa, hot sauce etc.
Lunch: Red Curry Dumpling Soup
1 tablespoon red curry paste or to taste
1 can (14 oz) coconut milk
1 Tbsp grated ginger
2 garlic cloves, minced
1 scallion stalk sliced, white and green part separated
3 cup chicken broth
1 tablespoon fish sauce or soy sauce or salt to taste
1 teaspoon brown sugar
Juice of ½ lime, optional
1 carrot, julienned
1 head broccoli, cut into small florets
Frozen dumplings (I used Trader Joe’s Chicken Cilantro Mini Wontons)
Oil
Directions:
1. Add a bit of oil and add the curry paste into a pot. Add a splash of coconut milk to prevent the paste from burning. After about 4 minutes add the minced ginger, garlic and white part of the scallion, cook for a few minutes. Add the remaining coconut milk, broth, fish sauce, brown sugar, lime juice if using. Let it simmer for a few minutes. Adjust seasoning.
2. Add carrots, broccoli and dumplings. Let simmer for 5 minutes or until vegetables have reached your desired tenderness. Serve with sliced green onion and chili crisp.
NOTE: the spicy level in the red curry paste will differ depending on the brand. You can start with 1 teaspoon and increase for more heat.
Snack: Smoothie Popsicle
Into a blender, add 1 orange (skin removed and cut into fourths), add 1 banana, 1 cup strawberries and ¾ milk (or liquid of choice). Blend until smooth and pour into popsicle mold. Freeze for at least 4 hours until completely firm.
Dinner: Salisbury Steak with rice and green beans
Ingredients
For the patties:
1.5 lbs ground beef
½ cup diced onion
2 garlic cloves minced
½ cup panko
1 egg
2 teaspoons Worcestershire sauce
2 tablespoons ketchup
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried oregano
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon smoked paprika
Oil
Gravy:
1 onion, sliced
2 garlic cloves, minced
1 tablespoon butter
2 tablespoons all-purpose flour
2 cups beef broth
1 teaspoon Worcestershire sauce
1 teaspoon salt
½ teaspoon each: black pepper, garlic powder, onion powder, dried oregano, smoked paprika
Directions:
For the patties: combine all the ingredients except the oil into a large bowl. Use your hands to combine. Divide into 6 patties. Add a bit of oil into a skillet and sear the patties for 4 minutes on each side. Be sure to cook in batches and transfer to a plate.
For the gravy: into the empty skillet add a bit of oil if needed. Add the sliced onion with a pinch of salt and cook for 5-7 minutes until softened. Add the garlic and butter, once butter has melted, sprinkle the flour on top. Fold into the onion and cook for 1 minute. Slowly add the broth and stir until there are no lumps. Add the remaining ingredients and let simmer for a few minutes until thickened. Return the patties back into the skillet. Spoon gravy over the top and simmer on medium low heat for 12-15 minutes or until internal temperature has reached 160F. Served with rice and veggies.
