I sometimes make this soup once a week because it is so good and easy to make. This is roasted cauliflower and potato soup. But it also has roasted garlic and roasted onions, so it may be more of a roasted vegetable soup.

What you will need:
1 head of cauliflower
4 med white potatoes
5 garlic cloves
half of an onion
Salt
Black Pepper
Olive Oil
2 tbsp butter
3.5 cups water and 2 2.5 tsp of powdered Chicken Boullion or 3.5 cups of chicken broth


Rough chop all vegetables and spread out on a sheet tray. I also rough peeled the potatoes, and sometimes I leave the peels on, totally up to you. I leave the skin on the garlic because it will be easier to squeeze the garlic out once the vegetables are cooked.
Season with salt and pepper and sprinkle with a generous amount of olive oil.
Cook in the oven at 400 for 30 to 35 minutes depending on your oven.
Once done, place 2 tbsp butter in heated dutch oven and add vegetables. Add water and boullion or broth and cook until vegetables are evenly soft. Once done take off heat and use hand mixer to mix until smooth or to whatever texture you like. YOu can also add 1/3 cup of half and half or cream if you want it creamier.
Garnish with cheese and bacon bits and enjoy.
