Ingredients:
1 medium onion
2 garlic cloves
1-inch ginger
3 green chilies
2 small tomato
½ cup fresh coriander
¼ cup mint
2 tbsp cooking oil
375-gram paneer
2 tbsp butter
1 tsp cumin
1 bay leaf
4 cloves
8-10 peppercorn
2 small cinnamon sticks
1 tsp salt
½ tsp garam masala
2 cups-soaked basmati rice
2 cups hot water
1 cup hot milk
1 tsp salt
3 tbsp fried onions
1 tsp ghee


Instructions:
1. Add the following to a food processor to be finely chopped; onion, garlic cloves, ginger, green chilies, tomato, fresh coriander and mint
2. Drizzle cooking oil in a pot and lightly brown the cubed paneer pieces
3. Remove from heat and set aside
4. Add butter, cumin, bay leaf, cloves, peppercorn, cinnamon sticks and the finely chopped mixture of herbs and garlic ginger
5. Salt to taste
6. Saute for 7-8 minutes on medium-high heat
7. Splash of water as you continuously stir
8. Add the paneer back into the pot
9. Add basmati rice that has been soaked for 30 minutes
10. Pour hot water and milk
11. Salt to taste
12. Simmer until rice absorbs water
13. Cover with lid and cook for another 15 minutes on low heat
14. Garnish with fried onions and ghee
15. Ready to Enjoy!
