Hi friends, today I will share with you one of the most commonly used recipes at home. Raw mango and chilli pickle are something that we all love to eat. So let's prepare this at home today.

Things you will need:
RawMango: 1 kg
Green chilli: 100 gms
Mustard oil: 250 gms
Salt: 2tbsp
Haldi pwd: 3 tbsp
Coriander: 4 tsp
Sauf/Fennel: 2 tsp
Methi/ Fenugreek: 2 tsp
Mustard seeds: 2 tsp
Hing/Asafoetida: 1 tsp
Kalonji/ kala jeera: 2 tsp

How to prepare:
• Take 1 kg of mango and 100 gms of chilli and wash them thoroughly and dry them.
• Now cut the mangoes into small pieces and do add the soft pulp.
• Cut the chillies into small pieces.
• Now mix both of them and add 2 tbsp of salt and 1 and ½ tbsp of haldi powder.
• Mix all of them and place it under the sun for one day.
• Prepare the dry masala.
• Take 4 tsp of coriander, 2 tsp of sauf/fennel seeds, 2 tsp of methi dana or fenugreek seeds and 2 tsp of mustard seeds.
• Grind all coarsely and put it in a bowl.
• Add 2 tsp red chilli powder, 2 tsp haldi powder, 1 tsp hing/asafoetida and 2 tsp of kalonji or kala jeera and keep aside.
• Heat a pan and add 250 gms of mustard oil till it starts smoking.
• Cool the oil and keep aside.
• Not after one day you will see that the mangoes have released juice.
• Don’t throw the juice away, use it in the pickle as it contains salt and it will help to preserve your pickle.
• Now add the dry masala and mix it with a spoon.
• Don’t use your hands for mixing as it can make the pickle ferment.
• Take a sterilized and dry bottle and put all the pickles inside it. and now add the cold mustard oil so that all the mangoes are dipped in it. this will prevent any fermentation.
• Now cover the bottle and keep it under sunlight for at least one month.
• After that your pickle will be ready to use with any recipes.
