五穀養生飯 Multigrain Steam Rice

材料 Ingredients:
白米White Jasmine Rice 1杯 Cup
三色糙米 Three Color Brown Rice 1 湯匙 Tablespoon
三色藜麥 Three Color Quinoa 1湯匙 Tablespoon
燕麥 Oat 1湯匙 Tablespoon
水 Water 1杯 Cup
黑芝麻 Black Sesame Seed 1茶匙 teaspoon
白芝麻 White Sesame Seed 1茶匙 teaspoon
小雲耳 Mini Black Fungus
杞子 Dried Goji Berries 1湯匙 Tablespoon
檸檬葉 Kaffir Lame leave 1塊 leaf

做法 Instruction
1. 先洗淨白米、三色糙米及三色藜麥,再浸水半小時或以上。Wash and rinse the white rice, brown rice and quinoa, soak for at least half an hour.
2. 洗淨小雲耳和杞子,加水浸軟。Wash and soak the mini black fungus and dried goji berries until they become soft.
3. 切碎檸檬葉備用。Chop finely the kaffir lime leaf.
4. 放米及藜麥於煲內,以1:1比例加入水Put the rice and quinoa into a pot, add water as 1:1 ratio.
5. 加入燕麥、黑白芝麻和小雲耳於煲內,伴勻。Add oat, black and white sesame seed and mini black fungus into the pot, stir well.
6. 煮食時間 10分鐘,開中火至氣閥門跳動,轉至小火至保持氣閥門跳動。Cooking time is 10 minutes. Turn to medium heat until the Vapo-valve start to click, then turn to low heat and maintain the valve keep clicking.
7. 加入杞子及檸檬葉煲內,再用小火煮1分鐘。Add the goji berries and kaffir lime leaf into the pot, cook for 1 minute at low heat.
8. 關火焗 10分鐘至收水。Turn off the heat and let it sit for 10 minutes until the water is being soaked well.

小貼示 Tips
米和水比例大約 1:1, 要視乎米種,日本米可能要減少水份。Rice and Water ratio is around 1:1, it depends on the types of rice, you may need to reduce water amount when cooking Japanese rice.
如米的份量增多,要加長煲飯的時間,每加1杯米要約額外加 1-2分鐘。If cooking more rice, the cooking time is needed to extend. Every extra cup of rice may need around 1-2 minutes cooking time.
