or tendli rice or ivy gourd rice

Ingredients:

. 100 gms tendli (ivy gourds)

. 1 cup rice

. 10 - 12 cashew nut

. chopped green chilly

. chopped coriander leaves

. 3 tbsp oil

. 10- 15 curry leaves

. salt

. 1 - 2 tbsp grated fresh coconut

. 1/2 tsp turmeric powder

. pinch of asafoetida (hing)

. musterd seeds

For Masala

. 2 & 1/2 tbsp grated dry coconut

. 10 -12 black paper

. 2 inch cinnamon stick

. 4 - 5 cloves

. 1 green cardamom

. 1 tbsp dry coriander seeds

. 1 tsp cumin seeds


Method:

. Wash rice 2 times with water.

. Drain water completely and allow
to rest for 10 minutes.

. Meantime cut tendli (ivy gourds) in
slices.

. To prepare masala dry roast dry coconut
in a pan.

. When turns light brown,add coriander
seeds,cloves,black paper,cumin seeds,
cardamom,and cinnamon and saute
for 2 minutes on low flame.

. Grind these roasted spices in mixture grinder
for fine masala powder.

. Masala is ready .

. Heat 3 tbsp oil in pressure cooker.

. Meantime heat 2 cup water on other
side.

. When oil becomes hot,add musterd seeds
and allow to crackle it.

. Add green chilly,cashew nut,turmeric powder
hing,and tendli slices.

.Saute it for 1 - 2 minutes and add washed rice.

. Again saute it for 1 - 2 minutes on low flame.

. Add hot water,salt and freshly grinded masala,
and mix well.

. Close lid and allow to pressure cook on
medium - high flame till 2 whistle.
then switch off flame.

. When cool down,open pressure cooker
and mix cooked rice gently.

. Tondli bhat or tendli rice or ivy rice
is ready.

. Serve it and garnish with chopped
coriander and grated fresh coconut.

. Enjoy..
