The weather's been beautiful here recently and we've definitely hit pizza oven season!

Usually I'm a "pizza all year round" kind of guy but this winter I focused on our winter BBQ series, and pizza took a bit of a back seat.

You might have already seen my video about leaving our Ooni ourside for three months, so I thought I'd get the cover off the Dome and do the same.

The oven was in pretty good condition given it hadn't been used since mid-January, but I always follow the same steps when I haven't used a pizza oven in a while, especially after winter - a much slower, longer heat up to protect the stone and ensure the oven is performing at its best before I launch the first pizza.

Your pizza making skills might have faded a little over winter too, so pay a bit more attention to the little details you probably take for granted by the end of summer - for example your lighting process, balancing stone/air temperature and turning your pizzas at the right moment.

This video was totally unscripted, I just thought I'd make some pizzas and see what happened, and I've included my mistakes along the way so you get to see the good, the bad and the ugly.
