This is the Philippines’ answer to the famous Frittata—Tortang Giniling! The savory taste of the ground pork and tender potatoes that melts in your mouth, another yummy dish cooked by my mom.

Way back when there were no non-stick pans, my lola (grandmother) always used banana leaf, because it helped to make a perfect round torta, but also the addition of the aroma and a slight hint of smoke from the leaf helped improve the taste. Even now, my mom is still doing that process even if she’s using a non-stick pan.

Ingredients:

1 lb ground pork (you can use ground beef, chicken or turkey as well based on your preference)
1 medium cubed potato
½ medium diced white or yellow onion
4 cloves garlic minced
1 medium sliced tomato
2 tbs oyster sauce
1 tsp salt
1 tsp ground pepper
3 medium eggs
1 tsp soy sauce
2 banana leaves (prepare more depends on how many tortas you’ll be making), mid rib removed
2 spring onion for garnish
1 tbs cooking oil
Ketchup for dipping (optional)

The Process:

1. Heat oil in a pan and cook the cubed potato until tender then set aside. In the same pan, sauté onion until fragrant then add garlic and tomato. Season with salt and pepper.
2. Put in the ground pork, let it cook for about 6 to 8 minutes then add oyster sauce and the cooked potatoes. Stir gently until all flavors are combined and make sure to always taste your food in between the process. Turn off the heat and set aside to cool down a bit.
3. Whisk three medium eggs with soy sauce and add in the ground pork mixture.
4. Use banana leaf that’s big enough to occupy the size of your pan, which normally 10” x 10”. Quickly heat the leaf over the flame—this is to wilt the leaf a bit to make it easy to shape in your pan.
5. Heat oil in the pan then line in the leaf. Pour in the mixture and cook for 8 to 10 minutes in low heat.
6. Once cooked, take it out of the pan and flip it over with a plate then put back in to continue to cook the other side. Finish the rest of the mixture with the same process.
7. Serve hot with spring onions on top and serve!
