Perfect Vegetarian Soup_Ingredients:
Mushrooms - 30g
Lotus - 80g
Cashew - 100g
Chestnut - 100g
Candied Dates - 5 pieces
Fresh Chinese Water Chestnut - 6 pieces
Yam - 7 pieces
Ginger - 1 piece
Potato - 1 piece
Carrot - 1 piece
Salt - 1 Teaspoon
Water - 3000g (15 cups/bowls)

Mushrooms 30g:
1. soak in water for 2hrs
2. cut off the roots of the mushrooms with scissors
3. rub it with a little flour to remove the dirt
4. rinse with clean water and set aside

Lotus 80g:
1. soak in water for 2hrs
2. pull out the heart of lotus
3. rinse with clean water and set aside

Cashew 100g: rinse with clean water and set aside
Chestnut 100g: rinse with clean water and set aside

Candied Dates 5 pieces:

1. pour some oil into the pot on high heat
2. pour in ginger slices, carrots and potatoes, stir fry for about 2 mins, serve on a plate for later use
3. prepare a big pot
4. pour in 3000g of water
5. add carrots, potatoes, cashews, chestnuts, lotus, fresh Chinese water chestnuts, mushrooms, candied dates, and yam
6. cover the pot and bring to a boil on high heat
7. boil/cook on med to low heat for 2 hours
8. add 1 teaspoon of salt and stir to taste and turn off the heat, ready to serve

淮山 7片
姜 1片

2. 用刀斩一下让蜜枣容易出味 (备用)

马蹄 6粒/个:
1. 用清水清洗干净
2. 削皮
3. 如果是比较大粒就用刀斩一下
4. 用清水清洗干净备用

淮山 7片:
1. 用清水泡2个小时
2. 用清水清洗干净备用

姜 1片: 削皮+用清水清洗干净备用

土豆 1个:
1. 用清水清洗干净
2. 削皮
3. 切块 (大块) 备用

红萝卜 1个/条:
1. 用清水清洗干净
2. 削皮
3. 切块 (大块) 备用

1. 锅中开大火倒入适量的油
2. 倒入姜片 红萝卜土豆 炒大概2分钟上碟备用
3. 准备一个大锅
4. 倒入清水3000克
5. 放入红萝卜 土豆 腰果 栗子 莲子 马蹄 冬菇 蜜枣 淮山
6. 盖上锅开大火煮沸
7. 开中小火煲2个小时
8. 放入1茶匙的盐搅拌调味即可关火
