Taco Night
Egg-free ~ Gluten-free ~ Nut-free ~ Wheat-free
Serves 4
Tacos are a favourite at my house, especially when we have friends over. I often have to insist that more than one topping go into the tacos, so that there’s more than just cheese on top, and my kids have now become pros at getting all toppings into their hard- or soft-shell tacos. Leftovers make a great taco salad for lunch the next day.
2 teaspoons (10 mL) olive oil
1 pound (450 g) ground turkey, chicken, or grass-fed beef
1 small yellow onion, grated
2 medium carrots, peeled and grated
1 small zucchini, grated
2 garlic cloves, minced or grated
2 to 3 teaspoons (10 to 15 mL) ground cumin
2 to 3 teaspoons (10 to 15 mL) chili powder
½ cup (125 mL) tomato sauce
½ cup (125 mL) salsa
Salt
Black pepper
12 medium taco shells or soft corn tortillas
Toppings (optional but super yummy)
Shredded lettuce or spinach
Diced cucumber
Shredded cheddar cheese
Shredded mozzarella cheese
Salsa
Guacamole
Greek yogurt or sour cream
1. Heat the olive oil in a heavy large skillet over medium-high heat. Add the onion, carrot, zucchini, and garlic and sauté until soft, about 5 minutes.
2. Add the cumin and chili powder and stir for 1 minute.
3. Add the turkey and cook until browned, breaking it up with the back of a fork if necessary. Spoon off any fat from the meat.
4. Add the tomato sauce and salsa and cook until heated through, stirring occasionally for about 5 minutes. Season with salt and pepper, to taste.
5. Spoon ¼ cup (60 mL) filling into each taco shell or tortilla and roll up. Serve with lettuce, cucumber, cheese, salsa, guacamole, and yogurt or sour cream, if desired.
Tip: Substitute grass-fed ground beef for the ground turkey if desired. To make vegetarian tacos, substitute 2 cans (14 ounces/398 mL each) beans (kidney, adzuki, or pinto), drained and rinsed, for the ground meat. You can also crumble tempeh and cook it like ground beef.
